sauce; Red Curry Chicken stewed in rich coconut milk, spiked
with Thai red curry paste and cinnamon bark; Squid Chili stir
fried, simmered in red curry paste; and Stuffed Prawns Masaman,
pan grilled prawns stuffed with prawn meat, carrots, celery,
potatoes, and coconut milk. The menu's biggest star brightens
the dessert table the mouth-watering Chocolate Fountain.
Festivities at Kamayan begin with the Cocina
Pampangueña. The Pampangueños are renowned throughout the
archipelago for their rich and flavorful culinary creations.
Elements of Spanish and Chinese cuisines, famed for their highly
seasoned, lavish dishes have been ingeniously combined in Cocina
Pampangueña.
Stellar dishes at the Kamayan buffet include
Pesang Dalag, fresh water mudfish boiled with rice water,
ginger, cabbage and pechay; Tapang Damulag, carabeef marinated
in salt, pepper and sugar, boiled, then fried; Costillas Adobado
marinated pork ribs simmered in tomato sauce, catsup and soy
sauce; Dinaldalem, stewed pork innards in ginger, garlic, onion
and bell pepper; Hito sa Ginto, stewed catfish in coconut milk
with fresh mushroom and yellow ginger; Guisadong Labong Saluyot
sa Gata, stewed bamboo shoots in coconut milk, sweet corn and
saluyot leaves.
Japanese fusion cuisine with its colors,
textures and flavors fashioned by master chefs await diners at
Saisaki. Nouvelle sushi takes a bow, captivating the senses via
Rainbow Batera, salmon, tuna, lapu-lapu, crabstick and egg
omelet layered on rice paper; Kani Aspa Chiisu Maki, crabstick
asparagus, and cheese rolled in rice paper; Kani Tempura Sushi,
crabstick tempura; Bunzen Maki, crabstick and cheese; and Ika
Ebiko Ae Gonkan or Squid with Shrimp Roe Gonkan.
Saisaki also unveils the New Flavors of Japan
with a scrumptious selection of dishes like Tori Niku Bacon
Aspara Maki, breaded beef with bacon and asparagus rolled in
chicken; Fruit Salad Furai, breaded chicken balls with fruit
cocktail; Ika Shake Zume Age, breaded stuffed squid; Shake Kawa
Niky Teppan, beef, vegetables and cheese rolled in salmon skin;
and Sakana Niku Teppan, beef rolled in fish fillet.
